Recipe: Ginger Greens

Ingredients

  • 2-3 baby bok choy or 3 c swiss chard or spinach with stems

  • 1 shallot (substitute: onion, leeks)

  • 1/2 c red, yellow or green peppers

  • 2 tsp freshly grated ginger

  • 2 TB healthy fat (olive, avocado, or coconut oil)

  • Lime or lemon zest

  • Sea salt and white pepper to taste

Directions

  • Clean the leaves, cut off ends, and slice into even pieces.

  • Heat non-stick pan on medium, add olive oil, shallots, and peppers. Saute for 3-5 minutes.

  • Add grated ginger, sliced greens and citrus zest. Stir to mix thoroughly.

  • Sprinkle with salt and pepper.

  • Saute 5-7 minutes until greens are wilted but retain vibrant color.

  • Option: Add a squeeze of 1/2 lime or lemon juice and serve.
